Bacon Veal Liver Appetizer

Ingredients
Serves 4
- 454 g (1 lb.) veal liver
- 375 g Bacon (1 package)
- 60 ml (¼ cup) honey Dijon mustard, for dipping
- 1 Lemon, cut into wedges
- salt, crushed black pepper
- 12 bamboo skewers
Preparation
- Trim the membrane off the liver.
- Pat the liver with paper towels to remove excess moisture and season with a little salt and pepper.
- Cut liver into 1 inch (2.5 cm) cubes.
- Cut bacon strips in half and wrap the bacon tightly around the liver.
- Secure the wrapped bacon liver with the skewer this will hold the bacon in place. Place three to four per skewer.
- Set oven to broil setting.
- Broil until bacon is crispy on one side, then turn and repeat (about 6-8 minutes each side).
