Cajun Veal Tacos
                                    
            Save time in the kitchen and try this easy, healthy and trendy recipe that can be prepared in less than 30 minutes.
        
        Ingredients
                    Serves 4
            - 680 g (1 ½ lbs.) ground veal
 - 185 ml (¾ cup) sour cream or as needed
 - 1 bunch of parsley (or cilantro), coarsely chopped
 - ½ head iceberg lettuce, shredded
 - 4 roma tomatoes, diced
 - 1-2 zucchini, diced
 - 1 large red onion, diced
 - 1 large red pepper, diced
 - 12 soft shell tortillas, individual size 7’’
 - 125 ml (½ cup) veal stock (or chicken stock)
 - 5 ml (1 tsp.) cumin
 - 5 ml (1 tsp.) cajun powder
 - 5 ml (1 tsp.) ground black pepper
 - Extra-virgin olive oil, as needed, for sautéing
 - Lime wedges, for serving
 
Preparation
- Heat a large skillet or sauté pan over medium heat. Add enough olive oil to cover the bottom of the pan.
 - Add the veal and half the spices. Cook 4-5 minutes.
 - Add the zucchini, red pepper, the rest of the spices and half of the red onion. Cook for 2-3 minutes.
 - Add the broth. Cook an additional 3-4 minutes on low heat or until the liquid has reduced.
 - Garnish the tortillas with the veal, the sour cream, the lettuce, tomatoes, the parsley and the rest of the red onion.
 - Serve with lime wedges on the side.
