Osso Buco

Ingredients

  • 4 - Osso buco
  • 2 - celeri sticks, diced
  • 2 - large carrots, diced
  • 2 - onions, diced
  • 4 - garlic cloves, minced
  • 30 ml - 2 Tbsp. canola oil
  • 1 -19 oz can (540 ml) diced tomatoes
  • flour for dredging osso buco
  • canola oil in sufficient quantity to cover the base of a large skillet
  • 30 ml - (2 Tbsp.) butter
  • 15 ml - (1 Tbsp.) veal concentrate
  • 375 ml -  (1 ½ cup) water
