Roasted Marinated Quebec Lamb Chops

Ingredients
- 12 Quebec lamb chops
Marinade
- 125 ml olive oil (½ cup)
- 45 ml (3 tbsp) honey
- 45 ml (3 tbsp) wine vinegar
- 2 garlic cloves, minced
- 15 ml (1 tbsp) ground dried thyme (or 1 sprig of fresh thyme)
- 15 ml (1 tbsp) dried rosemary (or 1 sprig of fresh rosemary)
- Salt & pepper, to taste
Preparation
- In a large bowl, stir together all marinade ingredients
- Add lamb chops, cover and marinate in the refrigerator for at least 2 hours.
- Remove lamb from refrigerator about 30 minutes before grilling to bring the meat to room temperature.
- Preheat the barbecue on medium-high heat. Remove lamb chops from marinade and barbecue uncovered for approximately 4 to 5 minutes on each side.
